Jessica Coppola Jessica Coppola is a nutrition scientist interested in the control of food intake by the brain. She completed Doctoral studies at UC Davis in 2004 and remain actively involved in research in nutrition, aging and the control of food intake by the brain. Jessica teaches a variety of nutrition courses in a variety of modalities including: face to face, online, hybrid and interactive television.

John Polagruto, PhD, MS John Polagruto graduated from the University of Massachusetts, Amherst (BS in Microbiology and MS in Nutrition) and the University of California, Davis (PhD in Nutrition). He is also a US Army Veteran (1990-1996), having served in Berlin, Germany and at Ft. Meade, MD as a US Army Intelligence Officer (SIGINT and Tactical). He is also a Southwest Asian Service veteran. John's areas of expertise are nutritional epidemiology (area of emphasis) and dietary flavonoids (relating to cardiovascular disease prevention).

Nadine J. Kirkpatrick, PhD Nadine J. Kirkpatrick received a B.S. degree in Human Development and then a PhD in Nutritional Biology - both from UC Davis. The focus of her dissertation was nutrition education in schools (Pre-K through 12th grade).
